Ingredients
  • 1 scoop protein powder
  • 3 whole dates, pit removed (optional: soak)
  • 1/2 tsp peppermint extract
  • 1/2 cup unsweetened shredded coconut
  • 3 Tbsp coconut milk
  • 1 Tbsp raw cacao nibs (or chocolate chips)
  • optional raw cacao powder (or unsweetened cocoa powder)
Instructions
  1. Combine all ingredients in a bowl -- EXCLUDING the raw cacao powder.
  2. Put the mix into the freezer for 30-60 minutes to form.
  3. Line a tray with wax or parchment paper.
  4. Form the ingredients into little balls. Dust with cacao powder (optional).
  5. Add the balls to the tray.
  6. Store in refrigerator or freezer.
