Nutty Granola Bars

Ingredients
  • 2 cups nut butter (almond, sunflower, etc.)
  • 2 Tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 1/2 cups quick oats
  • 1/2 cup quinoa, cooked (or quinoa flakes)
  • 2/3 cup unsweetened shredded coconut
  • 3 Tbsp raw cacao nibs (or chocolate chips)
Instructions
  1. Mix the nut butter, maple syrup, vanilla and cinnamon together.
  2. Add the quinoa, oats, coconut and cacao nibs. Stir until well combined.
  3. Line a 8" square pan with parchment paper. Press mixture evenly into pan.
  4. It will be too soft to cut immediately, so put it in the refrigerator for a few hours or freezer for 30 minutes.
  5. Cut into bars or squares and remove from pan.
Recipe Notes

I store mine in the freezer for several weeks.
