Ingredients
  • 2 lbs boneless, skinless breasts (cut into 1 inch cubes)
  • sea salt (to taste)
  • black pepper (to taste)
  • 1-2 Tbsp coconut oil
  • 1 whole carrot, large (chopped)
  • 3 whole garlic cloves, minced (or 1 tsp garlic powder)
  • 1 large lemon (juiced)
  • 1/2 bunch cilantro (for garnish)
Instructions
  1. Put all the ingredients into a plastic bag. Marinate the chicken in the refrigerator for at least 1 hour before cooking (overnight for best results).
  2. Place a large sauté pan over medium high heat. When the pan is hot, add the chicken. You may need to add a little coconut oil to the pan if the chicken begins to stick.
  3. Sauté for about 5 to 7 minutes until the chicken is cooked all the way through.
  4. Garnish with cilantro.
Recipe Notes

Optional: You can add other veggies (broccoli, snap peas, etc.) to this recipe to make a meal.
