Ingredients
  • 1 head cauliflower, cut into florets
  • 1 whole lemon, juiced
  • 1 tsp coconut oil
  • 1/2 tsp cumin
  • 1/2 tsp cayenne (optional)
  • 1/2 bunch cilantro
Instructions
  1. Ground your cauliflower florets into a rice-like texture using a food processor, blender, or hand grater.
  2. Place the “rice” into a large serving bowl.
  3. Add lemon juice, coconut oil, cumin, and cayenne. Mix thoroughly.
  4. Add chopped cilantro to serve.
Recipe Notes

This can be served cold or can be sautéed for 1-2 minutes.
